Chicken Curry

1 chicken – cook, bone and make broth with the bones

Saute one big onion in 4 T. butter

Add 4 T. curry paste and saute.

Add 1 can of coconut milk and 2 c. of chicken broth

When that is simmering, add 1/2 c. chopped crystallized ginger

Simmer 30 minutes.

Chop chicken and add with 1/2 c. raisins and some vegetables (I like a bag of frozen stir fry vegetables). Add another can of coconut milk and 1 1/2 T. fish sauce. I also added another cup or so of chicken broth.

When that is hot, add 1/2 c. cream and some lime or lemon juice (optional).
