Curried Cream of Broccoli Soup

Serves 4

Ingredients:

2 tablespoons coconut oil
1 or 2 large onions, roughly chopped
1.5 pounds broccoli florets (frozen works well, too)
1/2 medium apple, diced small
1 quart bone broth or organic free-range chicken broth
1 glob of curry paste
1 can full-fat coconut milk

Method:

Melt 2 tablespoons of coconut oil over medium heat in a large soup pot.
Sauté onions until softened. Add in curry paste to saute. Throw in the chopped broccoli and apple and add the chicken broth. Top off with some water if the vegetables aren’t submerged. Turn the heat up to high to bring the soup to a boil, and then lower to a simmer until the vegetables are soft (~20 minutes).
Let the soup cool slightly, add the can of coconut milk and then dump some or all of it into the Vitamix and blend everything until smooth. Return the soup to the soup pot and bring the soup back to a boil.
